Chow Chow
Chow Chow is an moderately easy dinner. Made with 10 large green tomatoes, 4 c. ground onion, 4 c. ground cabbage, 6 red bell peppers and 6 green bell peppers, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Grind tomatoes and mix with other ground vegetables. Sprinkle with salt and let stand overnight.
Rinse and drain. Combine remaining ingredients and bring to a boil.
Add vegetables and simmer for 4 minutes.
Do not overcook. Pour into sterilized jars and seal.
Process in hot water bath (212Β°) for 5 minutes. Remove jars and complete seal.
