Chow Chow
Chow Chow is an moderately easy dinner. Made with 1 qt. small white onions, 1 qt. small cucumbers, 2 heads cauliflower, 3 green peppers and 3 red peppers, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel onions and cucumbers.
If cucumbers are large, remove the seeds.
Slice tomatoes thin.
Chop onions, cucumbers and peppers small.
Cut cauliflower into small pieces.
Soak vegetables overnight in brine made of 1 cup salt to 1 quart water. Stir and mix well.
Next day, drain well.
