Chocolate Nut Caramels
Chocolate Nut Caramels is an moderately easy dinner. Made with 2 c. granulated sugar, 1 1/2 c. dark corn syrup (karo), 2 c. cream, 1 c. butter (not margarine) and 4 sq. baker's baking chocolate, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Put sugar, corn syrup, 1 cup cream and butter together.
Stir and cook to a vigorous boil.
Gradually add the other cup of cream. Do not allow the mixture to stop boiling while cream is being added.
Cook until thermometer reads 250Β°, stirring gently. Without a thermometer, cook to hard ball stage.
Remove from fire; add chocolate, nuts and vanilla.
Beat until chocolate is melted.
