Chocolate Mousse
A grown-up French-style mousse built on semi-sweet and unsweetened chocolate, espresso, light rum and whipped cream, set lightly with gelatin. Dense, glossy and richly bittersweet.

π¨βπ³ Instructions
In small saucepan, combine chocolates and coffee.
Heat over low heat until chocolates are melted.
In a large mixer bowl, beat eggs and yolks on high speed 10 minutes.
Add sugar and beat until shiny, 5 minutes.
Add melted chocolates, rum and vanilla.
Beat just until thoroughly blended.
