Chocolate Eclair Cake
Chocolate Eclair Cake is an moderately easy dinner. Made with 1 1/4 c. sugar, 1/4 c. cocoa, 1/4 c. milk, 1 stick oleo and 2 boxes (small size) french vanilla pudding, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook first four ingredients to a boil for 1 minute and set aside.
Mix pudding and 3 cups milk; fold in Cool Whip.
In a 13 x 9 x 2-inch pan, layer graham crackers.
Pour one half of the custard, then line another layer of graham crackers.
Top with the last of the custard and a third layer of crackers.
Cover this with the icing that was made from the first four ingredients. (Takes almost a box of graham crackers.)
