Chocolate Clouds
Chocolate Clouds is an moderately easy dinner. Made with 2 oz. unsweetened baking chocolate, 3/4 c. confectioners sugar, sifted, 3 tbsp. unsweetened cocoa powder, sifted, 3 large egg whites and 1/2 tsp. cream of tartar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Line cookie sheets with aluminum foil.
Finely chop baking chocolate in blender and set aside.
Stir together confectioners sugar and cocoa powder with a wire whisk and set aside.
In bowl, beat egg white and cream of tartar with an electric mixer at medium speed until thickens.
Increase to high speed and slowly add white sugar.
Beat until stiff peaks form.
Gently fold in cocoa mixture and chocolate until mixture is uniformly brown. Drop by rounded teaspoonfuls onto cookie sheet.
Preheat oven to 200°.
Let cookies dry at room temperature for approximately 45 minutes.
Bake at
200° for 1 hour.
Store in airtight container. Makes about 2 1/2 dozen.
