Chitterlings
Chitterlings is an moderately easy dinner. Made with 10 lb. chitterlings, 2 medium onions, quartered, 2 stalks celery, 2 bay leaves and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash chitterlings in water, rubbing as you would clothes, to remove all grease and residue.
Strip as much fat as possible from piece and in clear cold water. Drain and wash holding piece under cold running water (chitterlings thoroughly cleaned).
Place in large pot, cover with water and bring to a boil, drain, cover with fresh water.
Add remaining ingredients.
Cook covered over medium heat until about 4 to 4 1/2 hours.
Drain, cut into small pieces and serve with hot sauce.
