Chitterlings
Chitterlings is an moderately easy dinner. Made with 10 lb. chitterlings, 1 large onion, spiced with 6 to 8 cloves, 2 medium peeled whole tomatoes, 1/4 c. vinegar and 2 tsp. white pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Thaw and wash chitterlings through 4 or 5 waters.
Turn inside out.
Remove excess fat.
Add spices (except vinegar).
Add potatoes.
Cover with water.
Boil over low heat for 6 hours or until tender.
Add vinegar last 20 minutes of cooking.
Cut in small pieces.
Serve with tasty cold slaw, potato salad and corn bread.
