Finely chop first 5 ingredients.
Drain bean sprouts.
Combine chopped ingredients, bean sprouts and the next 5 ingredients in a bowl.
Chill.
Prepare batter for egg rolls.

Combine 2 beaten eggs and water; gradually blend into dry ingredients.
Beat until smooth.
Reserve 1/2 cup batter for sealing egg rolls.
