Chilies Rellenos
Chilies Rellenos is an moderately easy dinner. Made with 6 large green chilies, roasted and peeled, 1/2 lb. cheese, shredded, 6 eggs, separated, 1/2 tsp. salt and flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut chilies down the middle, open up and fill each with cheese (and beef and onions, if desired).
Dust with flour and set aside. Beat egg whites until stiff.
Fold in 1 teaspoon flour and salt to taste.
Add egg yolks.
Heat oil in a skillet.
Dip chilies one at a time in egg mixture and place in skillet.
Turn and cook until golden brown on both sides.
Serve immediately.
