Chili Verde
Chili Verde is an moderately easy dinner. Made with 3 lb. lean pork, cut into 1-inch cubes, 1 large onion, chopped, 2 garlic cloves, chopped, 2 large green peppers, chopped and 2 cans (4 oz.) diced green ortega chilies, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Lightly brown the pork.
Add onion, garlic and green pepper and saute.
Pour mixture into a crock-pot.
Add chilies, tomatoes, salt, oregano and cumin.
Add cilantro if you have it.
Add water. Cook 4 to 5 hours on high, longer if you want.
Thicken to taste with flour (if you like).
Serve on large tortillas topped with cheese (burritos).
