Chili Rellenos
Chili Rellenos is an moderately easy dinner. Made with 12 oz. monterey jack cheese, shredded, 6 oz. cheddar cheese, shredded, 2 eggs, 1 1/2 tsp. flour and 2 tbsp. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease a 7 x 11-inch pan.
Put in a layer of shredded cheese, then a layer of peppers cut in strips or chopped, then cheese and peppers and a layer of cheese on top.
Beat eggs; add flour, milk and a pinch of salt.
Pour over cheese layers.
Bake at 375Β° for 45 minutes.
Let stand 5 to 8 minutes; cut in small squares.
Serve on Ritz crackers.
