Chili Chicken
Chili Chicken is an moderately easy dinner. Made with 1 lb. boneless, skinless chicken breast halves, 1 tbsp. oil, 1 medium onion, chopped, 1 small green pepper, chopped and 1 small red pepper, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large skillet, saute chicken in oil until no longer pink; set aside.
In same skillet, cook onion, pepper and garlic until tender; drain.
Stir in chili and stewed tomatoes.
Add rice; arrange chicken on top of mixture and top with shredded cheese. Simmer 10 minutes.
