Chile Rellenos
Chile Rellenos is an moderately easy dinner. Made with 2 (4 oz.) cans green chiles, roasted and peeled, 1/2 lb. cheese (longhorn or monterey jack), flour, 2 eggs, separated and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut cheese into strips and press into chiles.
Dredge with flour.
Whip egg whites until stiff.
Beat yolk, salt and 1/4 cup flour.
Fold in egg whites.
Heat oil in skillet (2 inches).
Dip chiles in egg mixture.
Place in skillet.
Fry until brown, turn and fry on other side.
