Preheat oven to 375°. Slice the bread in half lengthwise.
Brush the cut side with olive oil and bake 15 to 20 minutes until toasted.
Combine in a blender jar or food processor the remaining ingredients; purée to a paste.
Spread on the bread; garnish with the parsley and slice into serving size pieces.
Serves 8 to 10.
