Chicken Vicenza
Chicken Vicenza is an moderately easy dinner. Made with 1 (3 lb.) broil/fryer, quartered, 1/2 c. olive oil, 1 c. artichoke hearts (optional), 3/4 c. cooking sherry (optional) and 1 clove garlic, crushed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Brown chicken in oil.
Drain and remove to platter (keep warm in oven).
Saute onions in oil until transparent.
Add tomatoes and simmer, stirring constantly for 5 minutes.
Return chicken to sauce, add other ingredients except sherry.
Simmer, covered, for 25 minutes (turn chicken occasionally).
Stir in sherry and cook 5 minutes more.
(Is good served with rice.)
