Chicken Tortillas
Chicken Tortillas is an moderately easy dinner. Made with 1 fryer, cooked and boned, 6 to 8 tortillas, broken into pieces (use corn or flour), 1 medium onion, chopped, 1 (10 oz.) cream of chicken soup and 1/2 can (1/2 c.) tomatoes and chilies (ro-tel), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cut chicken into bite size pieces.
Mix well with soup, tomatoes chilies and tapioca.
Line bottom of crock-pot with tortillas.
The chicken and soup mixture. Sprinkle onion and cheese.
Repeat layers of tortillas, chicken soup mixture, onion and cheese.
Cover and cook on low 6 to 8 hours or on high for 3 hours. Recipe may be doubled.
