Chicken Strata
Chicken Strata is an impressive dinner. Made with 8 slices whole wheat bread, 2 c. skinned, cooked and cubed chicken, 1/2 c. onion, finely chopped, 2/3 c. celery, finely chopped and 4 oz. can diced green chilies (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut the bread into 1-inch cubes and place on the bottom of a 12 x 18-inch nonstick pan.
Combine the chicken, onion, celery, chilies, mayonnaise, salt and pepper in a medium bowl; spoon over bread cubes.
Tear the tortillas into bite size pieces and place on top of the chicken mixture.
Combine the eggs, milk, cottage cheese and soup; pour over the top.
Cover and refrigerate overnight to allow the flavors to blend.
