*Chicken Strata
*Chicken Strata is an moderately easy dinner. Made with 8 slices day-old bread, 2 c. diced, cooked chicken, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 1/2 c. finely chopped celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Butter 2 slices of bread; cut into 1/2-inch cubes and set aside.
Cut the remaining bread in 1-inch cubes.
Place half of the unbuttered cubes in the bottom of an 8 x 8 x 2-inch baking dish. Combine chicken, vegetables, mayonnaise and seasonings.
Spoon over bread cubes.
Sprinkle remaining unbuttered cubes over chicken mixture.
Combine eggs and milk and pour over all.
Cover and chill for at least 1 hour or overnight, then spoon soup on top.
Sprinkle with buttered bread cubes.
Bake in a slow 325Β° oven for 50 minutes or until set.
Sprinkle cheese over the top the last few minutes of baking.
Makes 6 servings.
