Chicken Stew
Chicken Stew is an moderately easy dinner. Made with 1 whole chicken, cut up (exclude backs, optional), 1 pkg. yellow rice, 4 medium potatoes, 2 to 3 sliced carrots and 1/2 c. bell peppers, chopped, this recipe delivers authentic, satisfying flavors. Preheat oven to 350°.
Pour rice into a baking dish.
Place vegetables on top of rice.
Put cut-up chicken parts on top of vegetables and rice.
Salt and pepper.
Add 4 cups water.
Cover with lid or aluminum foil.
Bake at 350° for 1 hour or until done. Good with plain white rice, too.
