Chicken Spaghetti
Chicken Spaghetti is an moderately easy dinner. Made with 1 (5 lb.) pkg. chicken legs, 2 to 3 cans stewed tomatoes with juice, 1 to 2 cans ro-tel tomatoes with juice, 1 large jar pimentos, drained and 2 large jars sliced mushrooms, drained, this recipe delivers authentic, satisfying flavors. Boil chicken legs until cooked (reserve chicken stock).
Mix chicken meat (skinned and boned), stewed tomatoes, Ro-Tel tomatoes, pimentos, mushrooms and 1 pound of Cheddar cheese. Season with salt, pepper and garlic to taste.
Add cooked spaghetti.
Mix well.
