Chicken Rotel
Chicken Rotel is an moderately easy dinner. Made with 1 large chicken breast, 1 (8 oz.) box spaghetti, 1 lb. velveeta cheese, softened, 1 can cream of chicken soup and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil chicken breasts and save broth.
Remove the skin.
Cook spaghetti in the chicken broth and then drain.
Chop chicken in bite-size pieces.
Also chop onion and peppers.
Combine chopped chicken, onion, pepper with soups and Ro-Tel tomatoes.
Place in casserole dish.
