Chicken Rotel
Chicken Rotel is an moderately easy dinner. Made with 2 to 4 c. chopped, cooked chicken, 8 oz. pkg. vermicelli, 1 medium onion, chopped, 1 green pepper, chopped and 1/2 stick margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook vermicelli according to package directions and drain. Add to chicken in a large bowl.
Saute onion and pepper in margarine and add to mixture.
Melt cheese and add to other ingredients, stirring well.
Last, add Ro-Tel tomatoes and peas. Place in greased 9 x 13-inch casserole and bake at 350Β° for 30 minutes or until bubbly.
Makes 10 to 12 servings.
Freezes well.
