Chicken Rice Italian
Chicken Rice Italian is an moderately easy dinner. Made with 3 lb. broiler-fryer, cut up, salt, 1 tsp. oregano, 1 (15 oz.) can tomato sauce and 1 c. converted rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 375Β°.
Remove excess fat from chicken.
Season with salt and oregano.
Remove and reserve 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish.
Stir well.
Arrange chicken over rice mixture.
Cover tightly with foil and bake 1 hour.
Spoon reserved sauce over chicken.
Sprinkle with cheese.
Return to oven for 2 to 3 minutes to melt cheese.
