Chicken Papaya
Chicken Papaya is an moderately easy dinner. Made with 1 lb. chicken thighs (skinless optional), cut in 1/2, 3 tbsp. vegetable oil, 4 cloves garlic, chopped, 2 tbsp. chopped ginger and 3 1/2 tbsp. patis (fish sauce), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Saute garlic and ginger in vegetable oil until golden brown. Add chicken.
Let simmer until water is dry.
Add patis; let it simmer again until water is completely gone and when the oil starts to sizzle.
Then add 5 cups of water.
Let it boil and then simmer for 15 to 20 minutes.
Add the papaya.
Cook the papayas until tender.
Then serve.
