Chicken Mandarin
Chicken Mandarin is an moderately easy dinner. Made with 8 boneless chicken breasts, halved, flour seasoned with salt and pepper, oil, 1 c. onion, finely chopped and 2 c. chicken bouillon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Coat chicken with flour, fry on both sides until brown. Transfer to 9 x 13-inch shallow casserole.
Add chopped onion.
Mix chicken bouillon with apricot; pour over chicken.
Sprinkle with parsley and almonds.
Cook, covered, at 350Β° for 45 minutes, uncover and cook 20 minutes more.
Serve over rice.
