Chicken Long Rice
Chicken Long Rice is an moderately easy dinner. Made with 1 (5 lb.) box chicken thighs, 3 stalks celery, 5 to 6 bundles long rice, 10 green onions, sliced and 2 1/2 to 3 qt. water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut up chicken (hekka style).
Soak long rice in warm water for 30 minutes.
Chop celery in fine pieces.
Boil water with chicken pieces.
Add Hawaiian salt, garlic, ginger, sugar, shoyu and celery.
Cover and simmer for 1 hour or until chicken is tender.
Cut long rice into desired length and add to chicken mixture.
Add green onions and simmer for 20 minutes.
Serve.
