Chicken Kelley
Chicken Kelley is an moderately easy dinner. Made with 6 boneless, skinless chicken breasts, 3 eggs, beaten, seasoned bread crumbs, 3 to 4 tbsp. margarine and 1 lb. fresh mushrooms, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak chicken in eggs for 2 hours, then dip breasts in bread crumbs (seasoned with seasoned salt, garlic powder, paprika and pepper).
Brown chicken in melted margarine for 2 minutes on each side; drain.
In buttered casserole (9 x 12-inch), place chicken; top with mushrooms.
Cover each breast with 2 slices Muenster. Pour chicken broth over top.
Bake at 350Β° for 45 minutes.
