Chicken Fried Rice
Chicken Fried Rice is an moderately easy dinner. Made with 2 tbsp. oil, divided, 1 egg, slightly beaten, 1 bunch green onions, cut in 1-inch pieces, 5 1/2 c. cooked brown rice and 2 c. frozen peas, thawed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat 1 tablespoon of oil in large skillet.
Cook egg for 1 minute until set, but moist.
Remove to plate and cut in 1-inch strips. In remaining tablespoon of oil, stir-fry green onions for 2 minutes.
Add rice, chicken, peas, soy sauce and ginger. Stir-fry 3 to 4 minutes.
Add egg.
Cook 1 minute.
Serves 6.
