Combine chicken and soy sauce.
Sprinkle with 1/2 teaspoon salt.
Let sit for 15 minutes.
Cook rice in hot oil.
Add chicken and broth.
Simmer, covered, 20 to 25 minutes.
Stir in onions, green peppers and celery.
Cook, uncovered.
Push rice to side.
Add eggs and cook until almost set.
Blend into rice.
Stir in lettuce or red cabbage.
