Chicken Fiesta
Chicken Fiesta is an moderately easy dinner. Made with 1 pkg. au gratin potato mix, 2 1/2 c. boiling water, 2/3 c. milk, 2 tbsp. canned, diced green chilies or jalapeños and 4 chicken breast halves (excess fat removed), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat oven to 400°.
Place potato slices and sauce mix in ungreased baking dish.
Stir in water, milk and chilies.
Place chicken breast on top.
Bake, uncovered, for 45 to 50 minutes. Sprinkle cheese on top and bake 5 more minutes until melted.
Can top with chopped tomato if you like.
Chicken breast fillets will also work.
Can double for company.
