Chicken Enchiladas
Chicken Enchiladas is an impressive Mexican dinner you can prepare in about 2 hours 28 minutes. Made with boiled whole chicken, cream of chicken soup, cream of mushroom soup, c. sour cream and c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Saute onion and bell pepper in butter.
Boil chicken. Debone.
Set broth aside.
Sauteed onion add soups, sour cream, milk, salsa and half of both cheeses.
Salt and pepper to taste.
Some may prefer more garlic powder.
Grease baking dish. Boil chicken broth, dipping each flour tortilla in broth to soften.
Put tablespoon mixture in tortilla, roll and fold ends.
When baking dish if full put remaining mixture over tortillas. Top with remaining cheese.
Bake until cheese is melted.
