Chicken Enchiladas

Boil whole chicken until it's falling apart. Remove skin and bone from chicken. In a large bowl, mix shredded chicken, 2 cans of enchilada sauce, diced onion and 2 cups of cheese. Pour a small amount of chicken broth in the bottom of 2 casserole dishes. Roll chicken mixture in tortillas.
