Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 1 large chicken, 1 can cream of chicken soup, 1 onion, chopped fine, 1/2 c. chopped black olives and 1 (4 oz.) can chopped green chilies, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Chicken covered water until tender.
Remove skin and bones and cut into bite-sized pieces.
Mix soup and sour cream.
Add 1/2 to chicken.
Grate cheeses together.
Add half to chicken.
Remaining ingredients to chicken mixture.
Heat flour tortilla in hot skillet and spoon on about 1/4 cup filling.
Roll up.
Place, seam side down, in greased 9 x 13-inch baking
Top tortillas with remaining soup-sour cream mixture.
Bake 30 minutes at 350Β°.
Put remaining cheese on top and return to oven to melt.
