Chicken Enchilada
Chicken Enchilada is an easy dinner. Made with 8 or 16 floured tortillas, 2 to 4 c. cooked, chopped chicken, 1 to 2 c. monterey jack cheese and 1/2 to 1 c. finely minced onion, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place tortillas in boiling water, one at a time for 1 second before filling.
Fill each tortilla with 1/4 cup of chicken. Sprinkle 2 tablespoons of cheese and 1 tablespoon of onion.
Roll tortilla and place seam down in baking dish sprayed with Pam.
