Chicken Enchilada

Made with 1 c. chopped onion, 1 clove garlic, minced (optional), 1 (16 oz.) can stewed tomatoes, 2 1/2 or 3 c. cooked, shredded chicken (3 or 4 pieces, breast) and 10 to 12 tortillas (flour), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion and garlic.
Add tomatoes, chicken and bouillon, simmer 15 minutes.
Add Cheddar cheese.
Spoon into tortillas, roll up and place in 9 x 13-inch baking dish.
Sprinkle with Swiss cheese and bake at 350Β° for 25 minutes.
