Chicken Curry
Chicken Curry is an moderately easy Indian dinner you can prepare in about 2 hours 20 minutes. Made with (3 to 4 lb.) chicken, cut up into bite-size pieces, medium onion, sliced, minced garlic, . ground turmeric and . ground cumin, this recipe delivers authentic, satisfying flavors. Place cut up chicken large bowl, add 1 tablespoon curry powder, garlic, salt, pepper and turmeric. Mix well and let sit overnight in refrigerator or for 2 hours minimum. In heavy pot, add oil making sure that the sides of the pot is coated.
When oil hot, add the remaining 2 tablespoons curry powder and the ground cumin. Cook over high heat for 1 minute, stirring constantly.
Add chicken, stirring to prevent sticking to the pot.
When chicken slightly brown, add onion and optional vegetables.
Add tablespoons of water if necessary. Cook gently until chicken tender. Serve over rice.
