Chicken Curry
Chicken Curry is an moderately easy dinner. Made with 1 whole chicken, 1/2 tsp. curry powder, 1/2 c. coconut milk (pure), 2 tbsp. oil and 2 1/2 c. diluted coconut milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Disjoint the chicken.
Season with salt.
Chop the onion fine.
Fry the chicken and set aside.
Saute the onion, chicken, thin coconut milk and curry powder and cook until the sauce is thick using a little flour for thickening, if necessary. When about dry, add pure coconut milk.
Add pepper and salt to taste.
