Chicken Carrie
Chicken Carrie is an easy dinner. Made with 3 tbsp. melted chicken fat, 1 large onion, thinly cut, 1 large green pepper, cut lengthwise, 4 large chicken breasts and 1/2 plus c. chicken broth (i use 1 can campbell's chicken broth), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Use a skillet or wok.
Saute onion, green pepper, salt and pepper in chicken fat.
Place potatoes on top of ingredients in skillet or wok, then chicken breasts on top of potatoes.
Pour in broth.
Cover and simmer gently, about 30 minutes.
Do not stir.
