Chicken Carrie
Chicken Carrie is an moderately easy dinner you can prepare in just 58 minutes. Made with . melted chicken fat, large onion, thinly cut, large green pepper, cut lengthwise, large chicken breasts and plus c. chicken broth (i use 1 can campbell's chicken broth), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Use a skillet or wok.
Saute onion, green pepper, salt and pepper in chicken fat.
Place potatoes on top of ingredients in skillet or wok, then chicken breasts on top of potatoes.
Pour in broth.
Cover and simmer gently, about 30 minutes.
Do not stir.
