Chicken Cacciatore
Chicken Cacciatore is an moderately easy dinner. Made with 2 lb. cut-up chicken legs, 1 large can of italian style plum tomatoes in purée, 1 large onion, 3 to 4 cloves of garlic and 1 tbsp dried basil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash chicken and brown lightly in olive oil using a large saucepan. Add onions, garlic and basil;
Saute until onions are tender. Add tomatoes and all of purée to chicken mixture. Cover and simmer gently for two hours. Stir chicken a few times during the two hours, being sure to push the chicken down under the sauce before covering the pan and leaving it to simmer. Serve over linguine.
