Chicken Cacciatore

Broiler into small pieces.
In a deep frying pan with a cover,
3 tablespoons olive oil; add chicken and brown until golden sides.
(If desired, skin can be removed.) Add chopped onion, parsley, basil, salt and pepper. Brown together with chicken until onion is golden.
Pour over all 1/2 cup
(white or red).
Cover and let simmer for about a minute; tomatoes that have been crushed with a fork.
Cover and simmer for 20 to 30 minutes or until chicken is tender. Makes 3 or 4 servings.
