Chicken Cacciatore
Chicken Cacciatore is an moderately easy dinner. Made with 1 large frying chicken, cut into pieces, 1/2 c. oil, 2 small onions, sliced thin, 2 cloves crushed garlic and 3/4 c. white wine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat oil and cook the chicken pieces in it until they are golden brown, turning frequently.
Add onions; cook a few minutes longer.
Add garlic, tomatoes, basil, salt and pepper.
Cover pan and cook gently until chicken is done and tomatoes are cooked to a sauce.
Stir occasionally.
Continue cooking for about 45 minutes. Add wine.
Cook another 15 minutes.
Serve with Italian Rice and a green salad.
