Chicken Cacciatore is an moderately easy dinner. Made with 2 1/2 to 3 lb. frying chicken, cut up, 1/4 c. olive or salad oil, 2 medium onions, sliced, garlic to taste and 1 (1 lb. or more) can tomatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown chicken in oil.

Remove chicken.

Add onions and minced garlic; cook until just tender.

Return chicken to pan.

Combine tomatoes, tomato sauce, salt, pepper, oregano, celery seed, bay leaves and hot pepper, if desired.

Pour sauce over chicken. Cover and simmer for 30 minutes.

Add 1/4 cup Sauterne, if desired.

Cook, uncovered, for about 15 minutes.

Serve over hot noodles or spaghetti.
