Chicken Broccoli
Chicken Broccoli is an moderately easy dinner. Made with 1 lb. chicken (boneless breasts), 2 c. broccoli flowerets, 1 medium red pepper, 1 tbsp. vegetable oil and 1 (8 oz.) can water chestnuts, sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut the chicken breasts into strips.
Cut the pepper into thin strips.
Heat the oil in a large skillet.
Add chicken; cook and stir until it is thoroughly browned.
Add the broccoli, red pepper and water chestnuts.
Cook and stir until tender-crisp.
Mix in broth, soy sauce, cornstarch, garlic powder and ginger into the mixture.
Bring to a boil; let it boil for 1 1/4 minutes.
Prepare the rice as directed on the package, omitting the margarine and salt.
Pour mixture over rice and serve.
