Chicken Bombay
A fragrant curried chicken bake with apple, onion, and raisins served over rice. Mild, sweet, and aromatic; an Anglo-Indian dinner that wins over curry skeptics.
👨🍳 Instructions
Melt oleo in 2-quart oblong casserole in 350° oven.
Remove from oven.
Stir in curry powder and ginger.
Place 6 chicken pieces (thick side down) in pan.
Season with salt and pepper. Top with onion, apple and raisins.
Cover and bake at 350° for 30 minutes.
Turn chicken and cook, uncovered, until tender.
Remove from pan.
Add rice to sauce in pan.
Put chicken on top of rice. Makes 6 servings.
