Fry onions and potatoes in 2 tablespoons oil until brown; set aside.
Melt butter and add chicken and tomatoes; lightly fry. Add all ingredients and 2 cups water.
Cook 40 to 45 minutes, until tender.
Serve over rice with mango chutney.
