Chicken Andabya
Chicken Andabya is an moderately easy dinner. Made with 12 to 18 boneless chicken breasts, 1 c. orange juice, 1/4 tsp. garlic flakes, 1/4 c. parsley and flour, seasoned with salt and pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine orange juice, garlic flakes and parsley for marinade. Marinate chicken overnight or for a few hours.
Dip chicken in seasoned flour; fry until brown (do not overcook).
Remove chicken and pour oil out of pan.
Add butter and sherry and heat until glazed.
Add raisins and olives.
Bake chicken at 375Β° about 25 minutes.
Pour sauce over chicken last 5 minutes.
