Chicken Adobo
Chicken Adobo is an moderately easy dinner. Made with 1 1/2 to 2 lb. chicken (may be frozen, may be skinless and boneless), 2 c. water, 1/2 c. vinegar, 1 bay leaf and 2 cloves garlic, crushed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine chicken, water, vinegar, bay leaf, garlic, pepper and soy sauce in a medium to large saucepan.
Bring to a boil; cover and lower heat.
Cook until chicken is done and a small amount of broth is left.
Add the oil and brown the contents of the pan, if desired.
(Cooking time is 45 to 60 minutes average.)
Serve over rice.
