Cherry Jubilee
Cherry Jubilee is an moderately easy dinner. Made with 1/2 c. butter, 1 1/2 c. confectioners sugar, 1/2 lb. vanilla wafers, crushed fine, 2 eggs and 1 (22 oz.) can cherry pie filling, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream butter and sugar until light and fluffy.
Add eggs, one at a time, beat thoroughly.
Place 1/2 of crumbs in pan.
Spread butter mixture over crumbs.
Top with cherry filling.
Cover with whipped cream and sprinkle remaining crumbs on top.
Chill for several hours or overnight.
